Garlic-Lime Pasta Recipe

But I can't stay from you, there's just some things I can't control.
Carbs, this love hate relationship between us has got to end!

Carbs are an important part of a diet, they are our primary energy source. However it doesn't mean we can load up on all the cake, pizza and cookies we want. There are two types of carbs complex (good) and simple (bad).

A few simple carbs you should limit or avoid as much as possible: sugar ( this includes candy -artificial syrup), soda, white rice-bread-pasta, pastries/desserts, and even potatoes which are technically a complex carb but once in our body's they behave more like simple carbs.

It doesn't mean you can't enjoy the above mentioned on occasion, just don't make those your primary sources of carbs. That being said, here is a very quick simple recipe (white pasta is all I had on this day).

WARNING: measurements are a close guess, I have never been one to measure when cooking, which is probably why I suck at baking, ha-ha-ha!

You will need:
4 cloves of fresh garlic
2 table spoons of extra virgin organic olive oil
1/2 tsp thyme
1 tbsp. dry scallions
1/2 tsp Himalayan salt
1/4 tsp black pepper
1/4 cup fresh parsley
parmigiano-reggiano
1 cup pasta of your choice
1 lime or lemon
1 tomato

OK! now that you have all your ingredients here's what you do:

Dice your tomatoes, chop the fresh parsley and grate the cheese.

Put the oil in the pan (don't let it heat too long, it can actually destroy the oil's beneficial antioxidants), you'll want to immediately add your grated garlic and than the already cooked pasta. heat for half a minute and add thyme, scallions, salt, pepper, 1 tbsp lime zest. Cook for 2 minutes.

Serve pasta, and decorate with the tomatoes and parsley, sprinkle it all with some mouth watering delicious parmigiano-reggiano, and for the finishing touch simply drizzle a little fresh lime juice.
